Seared cod fillet with browned butter

Cod is mild and flaky, and browned butter gives it the flavor it needs. Use thick fillets so they don't fall apart in the pan.

Method

  1. Pat the cod dry and salt it.
  2. Melt 1 tablespoon of butter in a nonstick skillet over medium-high heat. Cook the cod 3 to 4 minutes, until golden underneath.
  3. Flip carefully, add the rest of the butter and cook 3 to 4 minutes more, spooning the butter over the fish as it foams and turns nutty brown.
  4. Take it off the heat when the fish flakes easily and reaches 145°F.

Tips

Watch the butter closely: it goes from brown to burnt quickly.

Storage and reheating

Best eaten fresh. Keeps 2 days in the fridge.
