Seared beef liver slices in browned butter

Liver has a reputation for being tough and strong, but that usually comes from overcooking. Cut it thin, cook it fast in hot butter, and take it off the heat the moment it is done.

Method

  1. Pat the liver slices very dry.
  2. Melt the butter in a skillet over medium-high heat until it foams and starts to brown.
  3. Salt the liver and sear it 1½ to 2 minutes per side, until browned outside (USDA's safe minimum for organ meats is 160°F).
  4. Serve straight away with the pan butter spooned over.

Tips

Ask the butcher to slice the liver for you; thin, even slices cook in seconds.

Storage and reheating

Best eaten fresh. Keeps 2 days in the fridge.
