Pork and egg bake in a baking dish with one square cut

An egg bake is the easiest way to feed several people at once, or to feed yourself for several days. Browning the pork first gives it flavor and renders the fat that keeps the eggs tender.

Method

  1. Heat the oven to 375°F and butter an 8×8-inch baking dish.
  2. Brown the pork in a skillet over medium-high heat, breaking it up, until no pink remains, 6 to 8 minutes. Season with half the salt.
  3. Whisk the eggs with the melted butter and the rest of the salt.
  4. Spread the pork in the dish, pour over the eggs and bake 25 to 30 minutes, until puffed and set in the middle.
  5. Rest 5 minutes before cutting into squares.

Tips

It's done when a knife pushed into the center comes out without wet egg on it (egg dishes should reach 160°F).

Storage and reheating

Keeps 4 days in the fridge. Reheat squares for about a minute in the microwave.
