Recommended Gear

You need very little equipment to cook meat well: a heavy pan, a thermometer you trust, and something to cook low and slow in. Here is what each cooking method on this site calls for.

    Oven-roasted

A rimmed sheet pan or roasting pan, a wire rack so fat drips away and skin crisps, and a thermometer for the thickest part.

  • 3 recipes

    Air fryer

A basket air fryer, 4 quarts or larger, so pieces sit in one layer without touching.

  • 2 recipes

    Grilled

A gas or charcoal grill set up with a hot side and a cooler side, and long tongs.

  • 2 recipes

    Slow cooker

A 6-quart slow cooker: big enough for a chuck roast or a pork shoulder.

  • 1 recipe

    Pressure cooker

An electric pressure cooker of about 6 quarts, or a stovetop pressure cooker.
