Two beef patties topped with fried eggs

When steak is expensive, ground beef does the same job. Thin patties cook fast and get a good crust. Fry the eggs in the beef fat left in the pan.

Method

  1. Divide the beef into two balls and press each into a patty about ½ inch thick. Salt both sides.
  2. Cook in a hot skillet over medium-high heat for 3 to 4 minutes per side, until well browned and 160°F inside.
  3. Move the patties to a plate. Turn the heat to medium-low and fry the eggs in the fat left in the pan.
  4. Put an egg on each patty and serve.

Tips

Don't press the patties down once they are in the pan; that pushes the juices out.

Storage and reheating

Cooked patties keep 4 days in the fridge.
