Thinly sliced grilled flank steak on a board

Flank is lean and full of flavor but turns chewy if it is overcooked or sliced the wrong way. Grill it hot and fast, and always slice it thinly across the grain.

  1. Heat the grill to high. Brush the steak with tallow and salt both sides.
  2. Grill 4 to 6 minutes per side with the lid closed, until it reaches 130°F for medium-rare (USDA's safe minimum is 145°F with a 3-minute rest).
  3. Rest 10 minutes on a board.
  4. Look for the lines running along the meat and slice thinly across them.

Tips

A grill pan or very hot skillet works if you don't have an outdoor grill.
