Shredded slow cooker chuck roast in its juices

Chuck is a hard-working cut full of connective tissue, which is exactly why it turns so tender after a long, slow cook. Browning it first is optional but adds a lot of flavor.

Method

  1. Pat the roast dry and salt it all over.
  2. Optional but worth it: brown the roast in the tallow in a hot skillet, 3 to 4 minutes per side.
  3. Put the roast in the slow cooker and pour in the water.
  4. Cook on low for 8 hours (or high for 5), until it pulls apart easily with two forks.
  5. Shred or slice and spoon the cooking juices over the top.

Tips

The meat makes its own rich juices as it cooks; keep them for reheating.

Storage and reheating

Keeps 4 days in the fridge in its juices, or 3 months frozen.
