Braised bone-in beef short ribs in their juices

Short ribs are rich and forgiving: once covered in the oven they look after themselves. Ask the butcher for English-cut ribs, the thick single-bone pieces.

Method

  1. Heat the oven to 300°F. Salt the ribs all over.
  2. Heat the tallow in a Dutch oven over medium-high heat and brown the ribs well on all sides, in batches, about 10 minutes in total.
  3. Pour off most of the fat, return the ribs bone side up and add the water.
  4. Cover and braise in the oven for 3 hours, until the meat is falling off the bone.
  5. Skim the fat from the liquid and spoon the juices over the ribs to serve.

Tips

They're even better the next day; chill them in the liquid and lift off the set fat before reheating.

Storage and reheating

Keeps 4 days in the fridge or 3 months frozen in the braising liquid.
