Oven-baked baby back ribs cut on a board, no sauce

Ribs need time more than anything else. Wrapping them for the first part keeps them moist; the uncovered finish browns the outside.

Method

  1. Heat the oven to 275°F. Pull the thin membrane off the bone side of the ribs with a paper towel.
  2. Season both sides with the salt.
  3. Wrap each rack tightly in foil and bake on a tray for 2½ hours.
  4. Unwrap, turn the oven up to 425°F and bake 10 to 15 minutes, until browned.
  5. Rest 5 minutes and cut between the bones.

Tips

The ribs are ready when the meat has shrunk back from the ends of the bones.

Storage and reheating

Keeps 4 days in the fridge. Reheat wrapped in foil at 300°F.
