Pulled pork with crisp edges on a dark plate

Pork shoulder is cheap, forgiving and feeds a crowd. The slow cooker does the work; a few minutes under the broiler at the end gives you crisp edges.

Method

  1. Rub the pork all over with the salt.
  2. Put it in the slow cooker with the water and cook on low for 8 to 10 hours, until it falls apart.
  3. Lift the pork out and shred it with two forks, discarding any large pieces of fat.
  4. Spread the meat on a tray, spoon over some cooking juices and broil for 3 to 5 minutes, until the edges crisp.

Tips

Freeze the shredded pork in portions with a little of the juice so it stays moist.

Storage and reheating

Keeps 5 days in the fridge or 3 months frozen.
