Soft scrambled eggs with melting butter on a dark plate

Most scrambled eggs are cooked too hot and too fast. Keep the heat low, keep stirring, and take the pan off the heat before the eggs look done; they finish cooking on the plate.

Method

  1. Crack the eggs into a cold nonstick pan and add the butter.
  2. Set the pan over low heat and stir constantly with a spatula, scraping the bottom and sides.
  3. When the eggs start to thicken into soft curds, after 4 to 5 minutes, take the pan off the heat and keep stirring for 30 seconds.
  4. Season with salt and serve while they are still glossy.

Tips

If the eggs start to set too quickly, lift the pan off the heat for a few seconds and keep stirring.

Storage and reheating

Scrambled eggs are best eaten straight away.
