Crispy roasted chicken thighs on a tray

Thighs are the most forgiving part of the chicken: they stay juicy even if you cook them a little long. Start them skin side up in a hot oven and leave them alone.

Method

  1. Heat the oven to 425°F. Pat the thighs very dry and salt them all over.
  2. Arrange skin side up on a rack set over a baking tray.
  3. Roast 35 to 45 minutes, until the skin is crisp and the thickest piece reaches 165°F (USDA's minimum for chicken; thighs are juicier closer to 175°F).
  4. Rest 5 minutes.

Tips

Salting the thighs a few hours ahead and leaving them uncovered in the fridge makes the skin even crisper.

Storage and reheating

Keeps 4 days in the fridge. Re-crisp in the oven or air fryer.
